Summer weather, summer rolls…. Awesome except I’m just a day
late. Just
Bizarre to say the least that January 30th was 65 degrees, but hey
I’ll take it.
Seems as if we just teleported to the closing of January.
Ah, the excitement of January and new years resolutions. Have you taken the
time to evaluate what you would like to bring into your life? We all know to bring in the new, we have to
let go of the old. The old is referring to ‘what no longer serves us’. How can you
make space for new passions, goals, or possibilities? What steps can you take
to walk that specific path? One of the top reasons I appreciate my yoga
practice is, that when I awake from shavasana, I set an intention to rebirth.
Every day is another chance to get back on track: be gentle, understanding, and
fill up with happiness.
Summer Rolls:
Veggies of choice julienned and marinated (cucumbers,
peppers, snow peas, carrots, daikon radish, mango)
Marinate:
Low sodium soy
sauce, ume plum vinegar, maple syrup, sesame oil, 1 drop of therapeutic grade
mandarin essential oil or mandarin/lime juice
Rice noodles:
Cook in boiling water for 5 minutes then rinse in cold water
or ice cubes
3-5 T of Tahini
3 T lemon juice
2 T sesame oil
1 t low sodium soy sauce and ume plum vinegar
2 t ginger juice or pickled ginger juice
1 drop mandarin therapeutic grade essential oil or juice of
fresh mandarin
1T smoked chili pepper
Blend in a high speed blender
Assembly:
Use collard green, rice wrapper or both
(I like to de-stem collards and use two so it is more
stable)
Drip some dipping sauce on wrapper then place on noodles,
veggies, sprouts/ micro mustard greens , green onions, avocado ect..
Folds both ends up, and then roll tightly.
All ingredients may be prepped and stored in fridge which
makes a convenient healthy lunch or appetizer. Explore, allow creativity to
flow, and stay healthy funky fresh my friends.
